Karibu Restaurant 10 Crescent St., Waltham. 781-899-7444. From hearty stews and starchy sides to tender steamed fish and smoky grilled meats, this out-of-the-way eatery offers a rare taste of East African foods. For now this simple storefront houses a humble point-and-choose style buffet ($10.50 per heaping plate) where you can fill up on Ugandan staples like matoke (mashed plantains and mushrooms) with peanut sauce, rice and beans, tasty greens, and chewy but flavorful beef stew, as well as foods inspired by Uganda's Indian population: rice pilaf, chapati flatbread, and the house specialty, sambusas, which are stuffed savory pastries similar to Indian samosas. Eventually, the owners hope to add table service and a made-to-order menu, so keep an eye on this one. (11/29/07, DENISE TAYLOR)
